Both series are the same bottarga; the difference is the skin. Waxed for long life and gifting, unwaxed for everyday use and restaurant kitchens.
AEGEA RESERVE bottarga comes in two series. The product inside is identical: same mullet, same salt, same curing. What differs is how the outer skin is protected.
UNWAXED SERIES
Natural skin, no coating. Ready to grate the moment you open it — ideal for everyday use and restaurant kitchens. Shelf life is 6 months unopened. The right choice for frequent use.
WAXED SERIES
Sealed in natural beeswax. This thin layer balances moisture, locks the aroma in and extends shelf life to 12 months. Its presentation is more striking, designed for gifting and premium retail.
WHICH TO CHOOSE
If you use it several times a week, the unwaxed series is enough and more economical. If you enjoy it occasionally, on special days, or plan to give it as a gift, the waxed series keeps far longer.
Before use, the wax layer peels away easily with a knife, leaving the bottarga untouched.
